Freeze-Drying (Lyophilization) Process for Food Applications



Freeze-drying preserves the color, aroma, taste, texture, and nutritional value of food, making it ideal for high-value products like fruits, coffee, meat, probiotics, and ready-to-eat meals.

The Three Key Stages:

① Freezing (Pre-Freezing)

  • Rapid freezing at -30°C to -50°C to form small ice crystals, minimizing cellular damage.

  • Critical factor: Slow freezing → large ice crystals → poor rehydration & texture loss.

② Primary Drying (Sublimation)

  • Under vacuum (0.01–0.6 mBar), heat is applied to convert ice directly into vapor.

  • Critical factor: Temperature must stay below the eutectic point to prevent melting.

③ Secondary Drying (Desorption)

  • Gentle heating (20–50°C) removes bound moisture, achieving <5% residual water.

  • Critical factor: Excessive heat may cause browning or protein denaturation。

  • How freeze-drying works?

    Freeze drying works by first freezing a substance, then lowering the pressure around it to a vacuum, which allows the frozen water to directly transition from a solid (ice) to a gas (water vapor) through a process called sublimation, effectively removing the water content without going through a liquid phase, thus preserving the material's structure and properties; this is often used to preserve food, pharmaceuticals, and biological samples by significantly extending their shelf life.
